Calling sleep unconsciousness "death" is stupidly edgy. Your consciousness isn't the only thing tying you to your own life. The only reason why people who have actually died can't be brought back from the dead is because the brain starts eroding and losing too much information too quickly. Human beings use their brains for pretty much everything, unlike some animals. Speaking purely from an evolutionary standpoint, this is both a pro and a con. It would be too easy to kill a human being entirely by killing their brains, while a different animal that has no centralized control center can function without the top of its head, as long as it has a mouth and a couple of brainlike structures left in its body. You can always rebuild a dead person's physical aspect back into life, but you can never recover the information from the original because their brain had stopped a long time and began to rapidly erode, destroying all the information within. In sleep, your brain's activity is never suspended for even a second. If you really want to die while unconscious, you better find a way to stop your brain from working while you're asleep.

Superstitious types put a lot of stock in souls and spirits but what they can't seem to realize is they're just waking up with the same brains they went to bed with.

Consciousness is interrupted but when you regain consciousness its the same consciousness. Its basically a form of suspended animation. Nothing is being destroyed and replaced.
