If I'm in Japan, do I introduce myself to people as (for example) Matthew or Massuyuu?xtra

i.e. should I scale my name back to the vowels and consonants in Japanese, or should I say my name naturally?

This is pretty obvious if you've ever taken a Japanese class. Japanese is phonetically poor; you katakanize your name like any other foreign word and pronounce it accordingly so others can remember it and write it down. Otherwise how the fuck do you think they'll understand you?

This one's pretty easy. If you're speaking English, Matthew. If you're speaking Japanese, マッスユー or however it is nippon-ized. Even though it often seems like a great portion of Japanese language is borrowed English words, you definitely don't say toilet instead of トイレ or hamburger instead of ハンバガー. It creates opportunities for misunderstanding and generally an awkward beat in the conversation since real people don't speak Japanese that way.

So if some Mandarin speaking guy said his name would you be able to maintain every accent and nuance that the natural speaker did? It is doubtful. Similar things are lost on the Japanese when it comes to English, and vice versa.
