They're propably doing it *because* even an idiot could guess EoSD or SA plots from fanarts, whereas in UFO you actually have to read on the character backstories to know their motivations and nuances such as what made Byakuren so insistent about bringing peace between humans and youkai and how it puts them at odds with the youkai-hunting protagonists (which is propably also the reason why UFO is less popular in fandom).

Then again, considering how badly they fucked up the EoSD story, I don't think they even manage to bring up Myouren and Byakuren's black magic past properly...

All of her dialogue in EoSD and in that Aya interview never hinted at her being locked away or being ignored. In fact in that interview she was acting completely normally with her sister. She was only ever hinted to be a little crazy during some times (see GoM) but never that she was lonely or needed to be restrained.

While I don't COMPLETELY disagree with that part, they're more or less hamfisting the fuck out of it awfully, but I guess that could be blamed on "time restraints", I can't particularly say I care to see such a potentially heavy storyline rushed like that, though.
A problem like this that's existed for a few hundred years isn't going to be easily solved by a few fucking one liners and a blatantly obvious build up to an anime team up fight against Remilia.
While I could write a text wall on everything they've fucked up with this fan-interpretation rewrite of ZUNplot to suit "muh headcanon", I'd rather just summarize it as "Protagonist animezation."
The heroines have to be 'cool' and drop one liners that instantly wins the trust and respect of those around them.

I still haven't forgiven them for making Sakuya going full on murder mode, what a crock of biased shit.

No, it's pretty much clearly stated over multiple stuff that Byakuren created her Sutra scroll whilst sealed to pass the time away, it's a new ability. So she had some degree of freedom but who the hell knows to what extent.

It is pretty clearly stated her Sutra scroll isn't made of paper but demonic materials exclusively from Makai. In fact it's made clear in SoPM that the scroll is alive to some extent and it's more like a cursed demonic weapon, it's permanently equipped to Byakuren and auto-casts all her spells and buffs.
