Well for starters Meiling comes off as one of the nicer characters in Touhou. She honest and open about things, there's no ulterior motives or doublespeak with her.
Humans from the Village have described her as being pleasant and friendly towards them, even hard to tell that she's not human.
As a result she's often depicted as being friendly towards pretty much anyone she's shown with, from the Big Sister style where the fairies and the like come to see her at the gate, to her just interacting with the other SDM residents.
Really the only time you ever see her as anything but nice is in grimdarkening alternate art, Sakuya revenge stuff, and porn doujin.
