So far none of the official materials say that Remilia pay any of her servants, the only thing close to payment in a Sakuya's line in the 3 fairies manga (when they disguised as fairies servants) as "Those who don't work don't get to eat", so at best we assume that the fairies work and eat at parties as payment.
