Pardon, I was trying to save the thread. I've remembered it now: Jiro Dreams of Sushi. It's a documentary about this Jiro guy who is supposedly the best maker of sushi. It's actually a surprisingly beautiful documentary about having a craft and about persuing goals, amongst other things. The trailer follows, and I thoroughly indicate this movie in case you haven't already seen it.

There was this (French?) one titled "Otaku" on Netflix. I'm not sure if it's still there.

It was pretty cool. It showcased various otaku niches from the 90s including figure making/collecting, model building, WW2/airsoft, porn hoarding, bondage, and 2D tru. I think it captures the essence of otaku pretty well and frames it within the sociocultural context of alienation in modern Japan.

Also, there's that one where Hideaki Anno goes back to his elementary school, shows kids around to his house and stuff and teaches them how to animate. It's depressing, but I really enjoyed it.

I wouldn't know, for I have never heard of anyone who has gone to his restaurant or talked to him. However, you must take into account that his restaurant is , after all, a small sushi place underground, much like tachisoba stands and other similar stalls. Because of this, I wouldn't be surprised if he operated his store in the same manner as other kinds of sushi shops. He must probably have an inflated price due to fame, but his business initself does not operate under the same conduct as, say, a western gourmet restaurant. Also, he is quite old, so some deviancy from good manners may be because of that. Given that, I would probably not go there, since I consider my tastes to be plebeian, and would not be able to enjoy the overpriced food, if it does indeed taste better than most.

The real question here is how can people tell the difference? Just how much sushi have these people eaten that they could actually say that Jiro's is somehow godly? How much does the price alone factor into their appraisal (more expensive things tend to get rated higher on enjoyment scales after all)?

Surely I am working with common sense here, but it is well known to any, that if you, for example, hand a good instrument to a amateur musicians, he'll do less than a experienced musician with a bad instrument. This could further go to the matter of expensive oil paint in the hand of uncapable painters, good cars for mediocre drivers, and so on and so forth.

I never understood the concept of food critique other than for the sake of marketing and back-patting. Without some sort of blind or double-blind system with adequate comparison and control, an appraisal of anything is pretty meaningless. It's like "oh this food is so good!" Compared to what? Past experience? Just how good is the critic's memory?

At any rate, even if Jiro himself made my sushi, I doubt I could taste the difference with any higher end restaurant. It's a nice documentary, but looking at it realistically, it's a whole lotta hype.

Food critics are actually pretty objective. They don't just say whether something is good or not, they have developed their own vocabulary for describing the detailed nuances of flavor they encounter, which allows them to qualify any statements about the quality of the food they're tasting.

That doesn't necessarily make their reviews useful to a layman, though. An art critic might be able to make a good argument for why fine art is superior to the cute anime pictures you collect, but that doesn't mean that you'd be happier visiting art galleries instead of collecting cute pictures.

Well, yeah, but you know, in terms of handling everything. If you've seen the documentary, everything is prepared by the chef in a decided order with no requests. Knowing what fish goes well after another, knowing how much soy sauce and wasabi to put on each piece, that kind of stuff takes a while to master. The whole theme of the film is "mastery." The apprentices take years just to learn how to make rice and tamagoyaki. It might seem stupid, but getting it consistently, if not obsessively, perfect isn't easy.

I was just gonna suggest this. It was very interesting to see otaku-ism being discussed not only by foreigners, but also in 90's, where these nerds were barely heard of outside the island. Its not really a happy doc, though. It usually talks about how childish otaku are, how they shut themselves off and their escapism. I'd recommend it.
