Sakuya isn't her real name, but a name Remilia gave her.

I think it's hinted that Sakuya is repaying some sort of debt to the Scarlets.

Given that she's a human with space-time hacks and META AS FUCK dialog, I think ZUN had more planned for her. Then he realized taking risks would be too much for the average Touhou fan, so he's just made the same story over and over again for 10 years, without developing any of the characters.

Two theories and whichever one I believe tends to change depending on the day since I can't make up my mind.

First one is the vampire hunter that's ever so popular. Sakuya was about to strike down Remilia in what should have been a final duel to the death but Remi still had one last trick up her sleeve. She incapacitated Sakuya and then performed some last minute fate alterations to subtly nudge Sakuya on the path to becoming her servant.

Second idea is that the other residents are kind of like family to her and the SDM is the closest thing to a home she really has. Sakuya was simply a lost child who wandered in one day and agreed to work there in exchange for food and a place to live.
