And to make things complicated, since Ibaraki is an Oni, she doesn't have a fixed lifespan.

She already has eternal youth, and as such her attempting to be a Hermit is like some D&D character trying to go multi-class. Obviously there are some powers that a Hermit has that an Oni does not possess, and maybe that's why she decided to perform a Class-Change.

It's more like because of the fact that 仙人 (sennin) doesn't have to be just "hermit". This probably came from shugendou (mix of all three main religions in Japan, buddhism, shintoism and taoism) where people who practise it can achieve some kind of "magical" powers. And they don't loose them if they leave the mountains.
So if I say it in more simple way, sennin isn't just hermit, it's more like some kind of wizard.
