If you're into programming and/or prefer using the console for many tasks, they've got a lot more to offer than Windows and are much easier to use in that respect.
Most Mac users say the GUI is a lot easier to use (although I don't see much of a difference, to be honest)
What I like about Linux the most is that basically everything is included with the OS. I didn't have to install any drivers (this depends on the hardware though) and when I need to install a program I just open this catalogue thingy, double-click on it and it downloads it automatically (a "full install" of Ubuntu Linux or so would be around 200GB big)

They're Unix-like? It makes sense if you're a computer science student or a programmer (ie: someone who needs to use a Unix-like system out of necessity). If most of your time on Windows is spent on a remote ssh session to a Linux server, you might want to start thinking about switching your desktop to OS X / Linux.

Though once you get used to the Unix way of doing things, the way Windows babysits you by putting up stupid limits on what you can do can drive you insane. For example, not being able to move / remove / open files while they're being accessed. Sure, OS X's GUI does try to babysit you, but you can take control through the CLI and it won't complain. What, can't eject that drive? Fuck you, diskutil unmount force /Volumes/Untitled. OS X's strength is that it behaves just like your average Unix OS if you use the CLI, but you still have a decent GUI when you don't want to get your hands dirty.

Then there's fact that Windows programs are mostly graphical and it's hard to script them (you end up downloading cygwin builds of various Linux utilities). So you waste your time searching the Internet trying to find a program that does what you want when you could have easily scripted it by chaining together already existent utilities. Having to click through a shitload of dialogs or open a specific program for something that you would have easily done with a one-liner in bash or a couple of lines in perl is really annoying. Sure, you can solve this in Windows by installing a really complete cygwin distribution, but at that point, you might as well just install Linux.
