I think the only people who go around saying Dark Souls SOOOO difficult are people blinded by the advertising and people who never even played it. The game is block, roll, backstab: The game. Should you actually decide to make the Great Shield that requires the soul of the Wolf, you are pretty much invincible in PVE. The only reason you would ever die again is because of shitty platforming.
