Furthermore, are you going to question King Arthur? She only passed off as a male for the majority populace. The round table mostly knew her identity as a female, with Bedivere and her brother Kay being certain of it and Lancelot being mostly sure. The problem was that zero began after stay. They couldn't really change all that much like second anon said. Though in my opinion, zero saber learned a whole lot and would be vastly different than the stay saber we have.

It could be argued that what happened with kiritsugu and the grail broke her too much, but she didn't really seem that broken in stay.

Heroes are saved at the moment of their death, and any subsequent summons are restored from that template, not whatever they may have become during the previous war. So, cool saber died at the end of F/Z, and we got indecisive saber during F/SN.

The incident with Lancelot hardened her heart and made her obsessed with the Grail, which we get to see in the Fate route (less so in other routes).

There's even a bad end where it's shown she wants the grail so badly that she'll decapitate Shirou in a second if she wasn't in love with him. (On reflex, not even on purpose)

imo Saber is great because she has these moments where her cuteness really shines through. Like the stuffed animals part.
