I'm going to be honest, I don't even know what FGO is. I don't know what the story is, I don't know what the lore significance is, I don't know any of the characters. I just know that they all look like they come from a Korean MMO or something, not a lot of remarkable character designs.

I didn't get that vibe from LE. I think Shirou just stopped pursuing his ideal because of regret and guilt and instead doing so to honor his memories with Saber. It's probably not that drastic of a change but enough to keep him from being too suicidal.
