They may hold up best like that when shipped. The fruit is not as soft, so there's less chance something will squish. Either that, or the bananas are cut early to ensure that by the time they get to the consumer, they seem as "fresh" as possible, even if that means they aren't entirely ripened.

Also, regardless of what people say, you cannot ripen a fruit once it has been pulled off the tree. You can soften it up, but you cannot ripen it further to make it sweeter or add flavor.

Also, tomatoes are almost always picked when green and turned red by exposing the tomato to ethylene, which is why the storebought tomatoes have no flavor compared to homegrown (and certain heirloom) varieties, which are more fully ripened on the vine.

Maybe more like banana, or perhaps sweeter. I don't know. Growing up I always wanted to have an ice cream banana tree. There are lots of different types out there, yet we only get one or two types in stores. It's a bummer too, because they look and seem like they're so tasty.

There are also many types of pineapple. The flesh of the ones in cans are more rigid than the flesh of wild pineapple and that's the only reason they're able to be shipped in cans without disintegrating. They were specially developed to be able to be shipped.

There are lots of fruits and such that aren't shipped because they're too delicate. Cashews, for instance, are the in the green part of this fruit. The fruit itself is too fragile to ship, but is entirely edible and locally enjoyed.

There's an island where (if I'm remembering correctly) a plant grows that when eaten, will block pregnancy. Naturally, the girls eat it and then go out to rape men.

It'd be nice to go around and enjoy all kinds of local fruits and vegetables.

Yeah it is pretty amazing how they can get to the point of redesigning things these days, and safely too, not like the whole GM food fuck-ups of the past.
These days it is very safe since they actually have a clue about what they are changing.

I've talked to a few people who work in food sciences related to this. One of them is trying to make some bambara groundnuts easier to grow.
Another is blasting UV on to strawberries IN the factory lines without modifying the lines speed to kill off enough surface bacteria to make them last longer.
