There's an easy modo if you don't think compiling from source is fun (Ubuntu, Mint, Mandriva, etc), various package-managed types (Debian, RedHat, openSuSe) and even Slax, which uses a web-based interface to make a customized kernel and packages it into an iso for you.

Or if you're a try-hard, you can still compile Gentoo, Arch, or Slackware yourself, but really, it's never been easier to use Linux.

What you are referring to as Linux is in fact GNU/Linux, or as I have recently taken to calling it, GNU+Linux. Linux is just the kernel and only a part of a system that the GNU+Linux user would recognize as an Operating System. Without the core utilities and libraries that the GNU ecosystem supplies, the resulting system would not be the same as you are referring to.
