There is - or hopefully, was - a fandom trend of simplifying the Hakutaku as a "werecow", ie. an otherwise ordinary human that turns into an anthropomorphic cow at full moon. And with that, the idea that Keine accurately reflects the traditional Hakutaku, when actually the whole concept of a "were-hakutaku" was created by Zun specifically for IN.
It appears some people weren't quite in on the joke when they first heard Keine was a cow.

Quite true, even traditionally. While I've yet to see any historical rendering of the Hakutaku as a cowgirl (not surprising considering the Hakutaku isn't a cow anyway), the Norwegian take on the Huldra tends to come as what would today be called a cowgirl or a foxgirl. The Swedish take on the same creature is usually not as adorable.

Then again, from Japan there's always the Kudan. But let's not go there.

Some rough guesses as Mizuki's youkai sometimes differ from traditional depictions, and not all characters are defined in the film.
