The only thing I don't understand in Mahjong really is the scoring. I know the yakuman hands and I even got them before. That feeling was great. I know about the Dora, although the one you flip over I haven't bothered memorizing because it's not like I'll go outside my room.

What determines a Mangan, Baiman, or just 2000 points.

Yaku each have a certain amount of Han. Build up that to be a Mangan or a Baiman. The actual points are caluculated by a combination of the han and fu.
Really, it's complicated. Luckily Tenhou does all the calculation for you.

one 5 from each suit is red

if someone declares a Kan they draw from the dead wall, it also results in one less tile drawn from the main wall

You're East so you have a 50% point bonus. Also, the East triple is both your wind and the round wind, so it's 2 han. Next you have 3 dora (1 red, 2 regular).

Total of 5 han means mangan : 8000, or 12000 when you're dealer.

Also, that was me you ron'd here. Thought I'd discard the East before it gets dangerous, wasn't expecting a tenpai at the 3rd turn...

They aren't. When you have a shit hand and can't see it getting any better it's a good idea to play defensively and go for open tanyao.
Of course sometimes beginners will ruin games by always playing open tanyao but a good player won't be beaten by that. If you just get a good hand once that'll make up for like 7 open tanyao.

What do you mean, what should you do? You don't really have to change the way you play. All it means is that their hands are progressing, and open calls give you a hint as to what they're aiming for.

Generally, when someone has 2 open melds, then there's a pretty good chance they are in tenpai so you may want to play defensively to them if you think they're ahead of you. If you assume they're in tenpai, you have more info on whether to push or fold than you would if someone riichis - it might be apparent that they are going for a particularly valuable hand (dora showing, all same suit, etc) or a particularly weak hand (looks like tanyao w/ most dora already in the discards or your hand). You may normally want to fold your mangan hand 1 away from tenpai to a riichi, but if instead you can see that tenpai opponent probably only has a 1000-2000 point hand, it's easy to decide that it's worth the risk to go ahead with your 8000 point hand.

If all 3 opponents are calling tiles like crazy, I say play carefully, bide your time and let them ron off each other until you are dealer or you have a potentially fast vauable hand. Don't think that you need to suddenly rush your hand into tanyao-only to compete with everyone else who is doing the same thing - wait till you have dealer advantage or some dora or something before you rush against them.
