I haven't played all of them, but of the ones I have I'd say IN is the easiest and ESD is the hardest.

I dont know which is the easiest but I can tell you the hardest.

I know people shit a lot on TD but I don't find it that easy especially if you're only playing for survival.

My favorite shots are probably needle Reimu and SanaeB from UFO.

My favorite moments were the first few times I reached stage 6 in Imperishable Night. It's so athmospheric.

SA is definitely the hardest...

Nah, that's how it should be, although I find them both around the same level of trickiness for different reasons.

Personally, UFO is harder than SA, took more effort to 1cc it.

Probably,my favorite, and least favorite moment in touhou all at once was my first time near 1ccing pcb. I had a scant handful of lives, never made it to yuyuko before this (youmu always kicked my ass royally,but this time I showed her a bomb...or two...or four). I managed,after a hellish fight, to beat yuyuko with no lives, no bombs to spare, I was overjoyed at managing to 1cc it,so I was zooming around the screen like a retard in celebration...then

Bitch ass bullets were too close to dodge,at that point.
I just kinda looked at the screen,it couldnt be helped. The feeling afterwards was exciting as HELL though.

Although,my first time clearing wriggle nightbug's last word in IN was a pretty good feeling,too.

I'd say EoSD was the easiest since it was the first touhou game I managed to 1cc.

TD is easiest, SA is hardest
everything else is somewhere between those two, but their difficulties don't differ significantly.

I like to use Reimu because I'm a fag that needs homing bullets and I dislike Sanae. Although for IN I refuse to use anybody but the ghost team because Yuyuko is my favorite. This is probably why I haven't beaten that one yet.

From easiest to hardest :
IN -> EoSD -> PCB -> MoF -> TD -> UFO -> SA

HrtP -> LLS -> PoD.D -> MQ -> SoEW
My favorite moment in Touhou was when I defeated my first EX Boss, Mamizou, after a whole week practicing.

Imperishable Night comes to mind first for easiest, but after further thought, Lotus Land Story is by far the easiest.

Hardest would be either Subterranean Animism or Undefined Fantastic Object (freaking curvy lasers).

Ten Desire has one of the most annoying Stage 1s ever.

IN is the easiest, SA is the hardest.
I've 1cced every game cept SA and dim.dream and I'd rather do extra bosses then try SA any more, it is sucking the life out of me. Trying Nue now.

Having now 'retired' from gameplay (damm arthritis) a favourite moment for me was finally beating this one on a slightly pacifist run.

UFO is undoubtedly the hardest though. UFO Extra is probably harder than damn Phantasm.

There was an English patch for Story of Eastern Wonderland floating around somewhere, but I can't find it anywhere. Nothing for the others either.

Lotus Land Story is by far the easiest. As far as Windows games go though, I'd say it's:

IN, TD, EoSD, MoF, PCB, UFO, SA

My favorite moment from a Touhou game was when I 1cc'd Mountain of Faith. It was the first game I ever 1cc'd besides IN but that doesn't really count.
I got to the 6th stage with 2 lives left, very low on power. I did surprisingly well against Kanako despite only having seen her spells maybe once or twice in my life. And then her final spellcard came, which I've never even seen before. I had no lives left and around 1.50 power. I captured the whole motherfucking spell. It seemed like it took FOREVER. I couldn't think about anything else but dodging the cards. I was in the zone, I don't even think I blinked. That moment of satisfaction when I won was great.

My favorites fights are against Youmu, Reisen and Futo

Anyone that thinks SA is the hardest hasn't played anything other than Normal.
