But... I don't really see Mamizou's purpose. Let's look at all the other Ex bosses and see what they contribute to the canon.

Flandre: adds to the SDM's feel of adorably deadly. if ZUN didn't hate her (was this real?) she might have added more life to the SDM
Ran: Yukari's servant
Yukari: self-explanatory
Mokou: compliments Kaguya, adds more depth to Kaguya's character
Suwako: ties into Shinto mythology further, and also adds more life to the Moriya crowd
Koishi: adds more dimension to Satori's character, basically serving as a foil for her
Nue: shows how Byakuren have the hots for every youkai, I guess

On the other hand, Mamizou sort of just... appear and got beaten up.

I think it's one of the few EX boss battles that makes actual sense. Many of of the others are just "this loli wants to fight you for the lulz". Not so say I dislike those, but seriously, your logic doesn't make much sense.

Mami just doesn't "add depth" to any of the TD characters, but she does add to the whole feud between the Buddhists and the Taoists. It shows that one fraction is even prepared to recruit to get ahead. What is the problem, really? I admit her design is a bit out of place compared to every other character in the game, but that's something else entirely.

I'm expecting a new Touhou WITH PLOT expanding the feud between buddhists and taoists, and then Reimu and Sanae shooting everybody to end the war.
Or even better, a Touhou KoF-like game based on the war, with characters representing the Hakurei side, the Moriya side, the Buddhist side, and the Taoist side. Add other factions like SDM, Eientei, Team 9 and the like, and you've got a new game.
I'd call it "Touhou Holy Wars".

I liked that one legend where a bunch of tanuki try to take over a shrine by showing up all at the same time and drumming their testicles so that the humans would be intimidated and run away. They fail miserably when a priest comes out and exorcises their shit, but then they have a tea party and everyone's friendly with each other. The tanuki even teach how to make drums to the local folk.
