Various things, depending on the game. You can pretty much only do first level of most arcade games, but that's still a pretty entertaining challenge for something like Ketsui or ESPGaluda or maybe even Dai Ou Jou. Sometimes there'll be a score attack mode, like with Dangun Feveron.

That's the biggest problem I'm facing, you can't exactly choose which stage you start off on in some of these games, and I don't know how long the average run of each game is considering I'm not very good.

maybe some challenge like "capture a spellcard as fast as possible", for example Most Valuable Vajra or Zombie Fairy?

Yeah, usually a full game is too long for something like this, and too difficult as well. 30 minutes to 50 minutes is no good when your rounds only last an hour.

Hm, the round is over but the person who started it doesn't seem to be here. If nothing else happens in 5-10 minutes or so I'll start the Dangun Feveron round, so everyone make sure your MAMEs are working.

Dangun Feveron/Fever SOS, score attack. To get to the score attack, hold shot and bomb when you hit start for a new game. Any ship and shot type, though I'll have a separate category for Ao Poko. To get Ao Poko, hit down up right left up down left right before you do shot+bomb+start.
