Humans are humans (Reimu, Marisa), youkai are human hunters (Yukari, Alice), Vampires (Remilia, Flandre), Magicians (Patchi), Shikigami (Ran, Chen), Fairies (Cirno, Daiyousei), Tengu (Aya, Momizi), Ghosts (Yuyuko, The Prismrivers), Oni (Sukia, Yuugi), Lunarians (Eirin, Reisen), and Others (Keine, Youmu) are self explanatory.

Youkai is moon for ghost monster thing.
Most Tuhus are monsters from moon mythology. Aya is a tengu(crow thing that steals children), Suika is an oni(ogre thing) etc. Seerno is a fairy. There are also some humans in Gensokyo but they're powerful wizards.
