Personally I think Chen isn't going to physically grow much more. She may grow older in terms of her mentality, but lets get something straight, she was kind of adult (in cat terms) from the start with her childish personality coming from her cat-like nature and relatively young age for a youkai.

She already has a large amount of independence and spends her free time playing and hunting in the wild, occasionally attacking humans that stray too far from the village and hanging around other cats.

If I remember correctly, Nekomata are basically animals that have lived long enough to start getting mystic qualities. Their tails split into two and they start to pick up magical powers. Chen is a fairly strong one, but is otherwise pretty average in terms of youkai.

tl;dr, Chen probably isn't growing up much more, like a true Youkai living in Gensokyo she chose a loli form. Young compared to her masters though.
