No, she didn't. Sanae didn't act any worse than the other heroines. The only reason people say she went berserk (besides spite/slander/etc) is that this was her first time exterminating youkai, and thus paid closer attention than they would if it was one of the usual heroines.
She found it fun, but she wasn't all GYAHAHAHA KILL THE YOUKAI like everyone says she was.
