Now he really did fell for Saber, and in Fate he even complimented her when he realized she was outside his reach.
But arthur was still human, a human who by sheer will and devotion (and divine weapons and magical friend) did miraculous feats.
But Arthur wasn't a mary sue like Galahad for instance, and had many many worries even though he&she trumped them all (ok wel almost).
To me it seemed like Gil fell for that "perfect"/Imperfect trait of Arthur, otherwise he would have probably hated her.

But there are actually a bunch of steel weapons and tools from the "bronze age" in real life as well.

The whole "stone age", "Bronze age", "Iron age" thing really have dropped more and more in credability over the years, it seems as if it has mostly been a matter of available resources and time and so on, travelling people also never had a real reason to make gear in such materials, thus we don't have much of that anywhere near northen europe etc.

It is hard to tell how his reaction towards her might be, although she lacks all (according to him) the defects he sees on modern humans.
