In English, there are only two "big" ones at the moment - Aquamentis's FireRed and Anjirusomething's Emerald.
Basically, the former is so-so and the latter sucks. They both, as with all (most) Touhou fangames, try to be too hard and end up implementing way too much fake difficulty, but at least Aqua's version only gives that shit somewhere around the midgame.

There is also the "official" (or actually first) version, in Japanese, which is currently being updated after two years of nothing happening. Nobody knows what's going to happen with it, but we know that the type names got changed and that there are some cool things with learnsets. Maybe it will be done by December, I guess.

In the original version, Chibi (or first stage) have a C before their names; normal (or second stage) have nothing; and Ex (or third stage) have an E. There are other forms too, most notably D(ark), only available to Rocket members; L(ast Word), only available to the second round of the E4, which basically gave them fucking GIGANTIC stats (LYukari has 180 base Defense and Sp.Defense if i'm not mistaken); A(dvent), basically homages to Advent Cirno; and... I guess that's it.

Now here's where it becomes messy. Everyone thought that having those overpowered Last Word forms would be cool (even though they were completely unavailable for player use - hell they didn't even have back sprites), so a lot of hacks were made. That guy who made the most famous version in English (as well as everyone else who not me I guess) also liked them, and thus he made them easily available in his version, along with thousands of other forms to fill the 386+ mon slots. Most of these forms are obtainable through the use of evolution stones, which made it somewhat easy to get them, if you consider how easy it is to get such items in RBYFrLg. So yeah.

In the end, I believe the creator made their version harder to incentive you to use these OP forms, but nobody like that aspect so there were nerfs everywhere.
