You need to understand that Saber was already "dead".
She had already lived the life of king arthur, and was later conviced that it had been a good life, a life that she should be proud of, both for her achievements and the ones who worked under her.

Everything that happened in f/sn was a nice extra she had the privelage to experience "after" she had died.
Other than realta nua's end (fanservice..) it was the only end where she came to peace with herself, accepted that her life had been good, was grateful for the what she had learned and then went to "sleep" as she should.

It was nothing wrong, it was nothing sad, it was simply as it should be, and it was good.
Both Shirou and Saber knew that at the end of the true end.

Yes, but the grail simply summoned a reduced copy of the heroic spirit, not the spirit itself. If the same applied in this case, then Shirou got to spend the afterlife with a copy of Arthuria while the real Arthuria stayed stuck in the throne of heroes. Not exactly a happy ending.

The great grail can establish some connection to akasha and it is built around the Einzbern's Sorcery Trait, "Wish-Granting", that allowed them to perform any type of magic without knowing how the spell for it.
The einzberns were still restricted by mana and magic circuits though and therefore they aimed to build the grail which would allow them to bypass that restriction.

...they don't. It's just information. Souls themselves are just records. Until they get summoned somewhere and manifested, they're not even people, just clumps of data. They don't sleep in stasis dreaming or mulling over shit, they straight out don't exist as actual beings until they are summoned, they go back to being nothing when theyir role is done, and they gain nothing from the trip because, existing outside of time, all information from each summoning is already there to begin with.
