Shirou has an innate understanding of weapons he's witnessed. He gets the gist of what the Gem Sword can do when he sees it in Illya's memories, even though they don't tell him what it can do. He tries to warn Saber that there's something seriously wrong with Lancer's spear, the curse it uses, even though Lancer doesn't use its effect on Shirou. He sees Caster's knife and freaks out about it.

He is made out of swords, and other martial weapons. He looks at them, analyzes what they can do, and has an understanding of them.

No. Though the explanation comes from other routes/later on in HF, Shirou naturally understands how weapons (at least bladed ones) are constructed and what abilities they might have; it's the basis for his Reality Marble.

As White Ren mentioned, this is why Shirou understood why Lancer's lance was extremely dangerous for Saber in their little spate, as well as the scene OP posted.

I always wondered how he knew that Contract Breaker would work in the final fight, but I just passed it off as something he learned from getting archer's arm. Archer must have gone through a holy grail war at least once, and the knowledge of such a weapon would be innate to his body.
