I'd like to broaden my repertoire of music with some legitimately good non-anime/touhou/game Japanese music. What are some rock/metal/"indie" (per american definition) bands that are worth looking into?

Velvet Underground, Allman Brothers, Leonard Cohen, Frank Zappa. If you're coming off cutesy stuff, you might be better off with indiepop. Rough Trade's indiepop compilation is a good enough introduction to see whether you don't hate it and google can fill in the rest.

I always wanted to ask this question, but I always thought /jp/ would troll my topic.

LAST ALLIANCE

Me and my dad, he's 1980's rocker guy, have been waiting every album and single from them and we're hardly ever disappointed. The reason why it's hardly is because the second vocalist is more of a popish guy, but the first vocalist has outstanding voice that screams hard rock indie and most of his songs are always rocking.

Aside from MONO ("Hymn to the immortal wind" is probably one of my favourite albums of all time), I'd recommend MUCC, especially their older stuff. Be sure to check out "Houyoku"

Well, if nothing else, they also got a Rockman arrange album. I also like the gamble album of which I posted the cover.
Can't say all that much though since finding their stuff has proven to take a bit more longer
