Her awareness levels are probably superhuman. If we assume she learned the modern variant of chess, say, after it became a popular phenomena (Around early 1800s), she'd've had more time to play it than if the oldest person alive had been playing from birth.

There are obviously ways to use fire to harm things that are immune to it.

Does it breathe? Does it breathe oxygen, in particular?

Suffocate it by igniting the atmosphere (at least around its mouth).

Cause problems in its metabolism generating heat in pockets of its body. Just because it can't be lit on fire doesn't mean fire can't be in a body cavity.

Create a infernally mighty firestorm beneath its feet, casting it into space with the blazing updraft.

Generate so much heat that the matter that composes it liquefies, then boils, regardless of whether it combusts.

What balances out the 3.5 tarrasque's immunity to fire is its inability to fly. To the point where low-level characters can beat it by flying above it and cheesing it with ranged attacks, but it takes forever because of the regeneration.

4e Tarrasque has its own weaknesses stemming from shitty design, but it does have anti-flying weaknesses.

There's two methods the hourai elixir seems to work.

First is Regeneration. Damage is reversed, wounds repair.
The second is Reincarnation. Damage is not reversed, a destroyed body is discarded, a new body forms from nothing.

Death by crushing, death by suffocating in a sealed room, death by drowning tied to a heavy object, these would be solved by Reincarnation in a safe area.

Since Mokou and the tarrasque both have unlimited regenerative abilities, this comes down to a slightly modified version of the The Grand Unified Theory of Batman Versus Anyone (which states "Batman will defeat any opponent in battle, regardless of other factors, if he has adequate preparation time"). In this case, if Mokou has adequate time to prepare/acquire a Scroll of Wish (or similar item) then she will be able to defeat the tarrasque. If such preparation is not possible, then the battle results in an eternal stalemate.
