I started learning Japanese by using multiple sources. After memorizing hiragana and katakana I started Duolingo and it teaches that you introduce yourself as such: けんです (or Ken desu) but when looking at a LinQ is shows it as わたしはけん. What’s the difference? Context?

if you aren't trolling, duolingo doesnt work for aquiring japanese on its own. you need to learn the grammar from another source. check out the stickies. the question is so early along the path that youre best bet is moving through the beginner resources in the op.
to explain this example, the shorter one just has わたしは omitted because you can infer it from the context.

わたしはけん as for me, ken
both are complete sentences in japanese because the grammar is alien to western languages.

In a normal conversation "Ken desu" would suffice, because both parties of the conversation will understand that you are introducing yourself as Ken.
Pronouns are usually dropped like that in informal conversations.

In a very formal conversation, you are expected to use pronouns.

I don't really agree with that assertion. While you might claim that uppercasing your posts is the grammatically correct way to talk, for me it comes across as exceedingly formal. In order to be more comfortable, I prefer not capitalizing my posts. It also gives off a friendlier demeanour, since capitalizing posts makes the contents feel more serious.
