Monsterization is a case-to-case-basis thing. According to the making-of page Dark Mages are unchanged in looks because they embraced monstrous nature even before they were corrupted. Also I don't remember if this is canon, but one factor that can play into it is their magical affinity, which is why Elves (who are by default more attuned to magic than regular humans) don't really look different after monsterization.
