You write/vocalise your answer in your mind's eye, out loud, on virtual notepad or on a piece of paper.

You know it poorly (e.g. only one of the pronunciations) - you press the second/white button.
You know it well (e.g. you only make a few mistakes in the stroke order) - you press the middle/green button.
You know it perfectly - your press the rightmost button (at first it will be green, then it will be blue).

Bonus advice - make up your own weird mnemonic scenarios than involve what composes the kanji, the meaning of the kanji and its pronouncings - you'll memorise them like 3 times faster this way.

It seems like you can "pre-mine" words from whatever content you are reading. How many seconds are you spending per card?
Are you hitting the "hard" button a lot? If so stop. Never use the "hard" button. Only use the "good" and "again" button. Occasionally use "easy" if you can instantly read and get the meaning of a word. I like using easy every time I see obvious katakana words like アイドル.
I recommend changing the "new interval" to something that isn't 0. 0.20 and 0.25 are pretty common but I see 0.10 and 0.40 and 0.50 fairly often too. If you fail a card with a long interval, the new interval greater than 0 will make it so the card doesn't reset all the way back to a 1 day interval after you go through the relearning steps. For example, failing a card with an interval of 100 days with a new interval of 0.40 means the card resets to a 40 day interval rather than all the way back to 1 days with the default settings. It makes sense since if you fail a word with a long interval, you probably know the word better than a word you just learned, so the interval should respect that.

when I see people use things like n3 or n1 level, I mostly take it to mean a gauge of japanese ability that is easy to compare across different people since the test is standardized. it is just the easiest way to roughly know someone's japanese level.
compare that to someone saying they can read a light novel or visual novel in japanese. which light novels and visual novels? how much do they really understand? do they know the same level of nuance that a native would pick up on? are they skipping the complicated flowerly descrpitive prose, or can they read it easily? how much are they looking up words? by contrast, if someone says they are N1 level, you know way more concretely what that means, even if N1 is a far from perfect test.
it doesn't mean you learn every grammar point and kanji and vocab in order.
