Kaguya is a lunatic princess.
But Mokou kept all her rationality. That's because she lived so long that even the insanity in her died.
Along with her really cool personality, she's also one of the most rational people.

The ability of never dying... you can only imagine what kind life she had. Even if she wanted to kill herself, she won't die. She doesn't look like she wants to die, though. In fact, she gloats about her inability to do die.
That added with all the knowledge and power she learned over the centuries gives her an astonishing yet a bit creepy vibe to her. It's overwhelmingly cool.

That's actually conceivably possible considering the fact that Mokou has the correct propellant needed to reach Jupiter.

If she was to use a mixture of the Orion drive and her power to manipulate combustion she could theoretically approach 60 to 70% the speed of light. The only problem is that she needs oxygen. And trying to slow down at such speeds would be impossible.

According to their canon definitions they heal at a finite rate. The only time they regenerate instantly is when their bodies get blown up. But as you know, gravity is just a bend in the spacetime continuum. If Mokou was to throw Kaguya into a neutron star, she would be compressed into a tiny area the size of a pea for an eternity. Her powers of eternity would be useless in such a scenario.

The way I've always understood it, for example, is that if you throw Kaguya into a volcano, she will be vaporized, but she will certainly not be revived inside the volcano. Likely you'll find her appear somewhere else inside Gensokyo.

Where did you get that from? Kaguya and/or Mokou don't have the ability to teleport. And Gensokyo has nothing to do with their powers. Gensokyo is just a product of Yukari's hijinks.

It is said on their description page that they would revive instantly if their bodies get blowned up. And you're both right and wrong with your volcano analogy. If you were to toss Kaguya into a volcano her body would melt instantly. Which in return would result in her body reviving instantly. Each time she regenerates she'll get closer and closer to the surface (because heat travels in that direction).

Or, it might be possible that ZUN obeys the conservation of mass laws. So let's say you were to melt Kaguya into ashes and smoke the ashes and smoke would reform to create her. (If ZUN doesn't follow this laws that would mean every time Mokou and Kaguya revive they increase the mass in the universe. Which would make the universe unstable resulting in a shiton of quantum problems).

I think ZUN regards Mokou as being one of the strongest characters in the Touhouverse. In StB he put her in the EX bracket along with Suika and Yukari. (The two youkai ZUN described as being in leagues of their own). He also said Mokou was too strong for the fighting games. Fanon powerlevels and ZUN's canon powerlevels are two different things.
