Here's a few pieces of advice, since you seem to be putting in some effort already.

First of all, you aren't using a VAE. The foremost effect of that is this kind of artefact you see in the picture attached (purple "bruise" between high contrast areas). A VAE will balance the colours while decoding your picture, preventing this from occurring. It'll have the additional effect of not spawning even more of these artefacts when upscaling your gens.

Which leads me to the next issue, which is your use of an incompatible upscaler. Upscalers are trained for different kind of imagery, so you'll want to use one compatible with an anime style - i.e. thick outlines, large swathes of uniform colour - and not one trained for realistic imagery - in brief, blurry outlines and gradient colours. An incompatible upscaler will cause your anime-style gens to appear muddy, "watercolour," have inconsistent outline thickness and spawn superfluous details out of stray pixels, such as one of your upscaled Flans growing tiger stripes on her left cheek from stray hair strands.

And speaking of upscaling. Without a VAE, each step of your upscaling the gen will further desaturate the image. Simple as.

Get a VAE, either one made for your model (I'm guessing one of the Mix Pro permutations or a pasetlised Anything?) or a universal one (anything-v4 is a go-to). Choose a different upscaler (preferably something like 4x-UltraSharp or one of the anime-retrained ESRGANs). You'll see improvements. I guarantee it.

That's more amusing than you may realise, given that this was my exact, word-for-word excuse two months ago too.

Here's the thing, though. You can still generate muted colour palettes either through the prompt (model-dependent) or with a style LORA, which there are an amazing bunch out by this time, all the while reaping the anti-artefacting benefits of a VAE. Or, failing that, it takes three clicks in any editing software to desaturate the image to the exact level that appeals to you the most.

Need an additional incentive? You can't inpaint without a VAE, as your inpainted area will suffer from the same desaturation problem I mentioned in reference to upscaling. Go ahead and try it. It's a known problem.
