As a former (but relatively recent) newbie, my understanding is that /egg/ Sakuya is generally better, as she makes more use of her TSP power in that one. Also, I think Alice's alt dialogue is in English whereas her default dialogue is in Japanese.
For a lot of those, it's worth noting that the differences probably aren't too major - experimenting myself I discovered that several were both Japanese and thus a gaijin such as myself was unable to tell a difference. I'm sure some super old /egg/ hand will chime in later.

Sakuya /egg/ because it's the most complete and is in english.
Lily white default because the other one is chinese, not ideal for sugoi.
Sanae alt because default sanae is incomplete and abandoned last time I heard.
Flandre default (also called retarded flandre sometime) is in english, it depict a rather young and cheerful flandre while ufufu is in japanese but depict a more mature and melancholic flandre, both are alright it's your call.
Koakuma default is also in english but has not that many lines if I recall correctly, Koakuma hair lengh seems to be slightly more complete but in japanese.
Dont know letty dialogue well enough to recommend one.

My point is that there is an existing height measurement. It's sorta hidden, you have to enter a bath with a 2hu and then you can measure her. Don't worry, it's not gonna impose on the other starting options if it were to be changed. Weird thing is that you can reroll to get a different height for a 2hu according to her body size selection. It's there, and for some reason you cannot just put in the height you want, it's gotta be random.

Koakuma hair is a weird dialogue set. Not only it is untranslated, but it also lacks some dialogues that the default does have. Also, in that dialogue your character has a weird fixation with her hair. You can customize the lenght and the lines will depict your character noticing her hair at any chance he gets, her hair even gets a note in her profile. I didn't like how it implied the whole hair fetish thing.

The only reason VIG went so high is because of a very buggy implementation that led to rapid, exponential growth, which has been fixed since nearly a year ago, adding the 5000 VIG cap.
It's not a mechanic that's meant to go so high, especially since the game encourages you to empty your balls for buffs, which becomes rather difficult when dealing with a maximum VIG that goes way too high.

That VIG limit has been in the game since those VIG buffs were added, it has nothing to do with that merge request or AnonTW. You can see right there in the screenshot, "VIG gains are *already* capped at 5000."
All that merge request does is cause STA/ENE gains to scale down at very high levels and make VIG gains a bit less powerful (but they're still buffed, since you can get the 2000 unique panties VIG buff which was previously unobtainable).
