Isekai is broad enough now that going from one world to another isn't a strict requirement anymore and usually anything focusing on reincarnation or time travel can fall into it.
Chuuni otaku autist with delusions of grandeur develops reincarnation magic and spends the next 1000 years accruing cheat-tier knowledge and skills while fucking over and stealing their host body(This part is conveniently whitewashed in the modern era isekai) all in an effort to settle past regrets and or make their long held delusions come true. Throw in the fact that he's actually a super simp(whose living his dream of being pursued by a hot goddess) whose problems arose from being unable to properly interact with a member of the opposite sex and also equipped with the emotional awareness of your average nerd and Roa makes a pretty good archetype for what would become your average self-absorbed reincarnated 'hero'. Extella the First has a story that goes along the lines of "Hakuno and Nero become King and Queen of the moon after winning the HGW and have to manage the Moon Cell and the rest of humanity until an ancient ayy invades and re-corrupts the Moon Cell". It's got okay gameplay but it's an alright story in my opinion, though they just kinda forget that other humans exist and it's all about the Servants on the moon splitting off into factions since Hakuno is split into three people for spoiler reasons and now they're all fighting to become the REAL King and Queen of the moon cell.
Extella Link's story is pretty much non existent, taking place after Extella but also not really because Extella didn't happen. The story was sacrificed to refine the gameplay and add a bunch of new servants. There are some new maps in Link but the returning maps look worse or boring. There is a hub world though and you'll get a lot of fun and cheeky interactions with and between other Servants. Ironically, despite having a basically non existent story, Link actually DOES continue or acknowledge plotlines from Extra/CCC, but they don't really go anywhere. Link was set up to be this "in between game" that "linked" Extella and Extella 2, but with Samurai Remnant coming out I have to wonder if Extella 2 isn't happening anymore
TL;DR Extella 1 is an alright Muso that continues the Extraverse lore, Link is a fun but mindless Muso that is more of a fanservice game than anything. Interesting since you can say the exact same thing about Extra and CCC's relationship

Ciel is likely the most traumatic backstory, but she's ignored despite being the only other who tries to learn to smile about it. She gets second fiddle in her own endings (the True End for different reasons). Doujin rarely does hot work of her and she's the gag character next to Hisui (who DOES get hot doujin). She gets jobbed to hell in every single fight in the manga version save one, and NO screentime at all in the Melty Blood Manga.

The most development Ciel gets in Kagetsu Tohya is when she confronts her nightmare with Shiki. That scene made me remember that, hey, Ciel actually has a backstory, and her route was kind of interesting, too. Ciel's route is the one I always remember the least about, and that makes me sad.

Ciel has a scene where the design team basically admits that Ciel isn't worth the time to create anything for.

Kohaku gets tons of side stuff. Akiha gets her own continuation of her path. Hisui gets her picnic with Shiki. Arcueid gets a lot of new info about her backstory and true self.

Ciel gets... a Messian curry scene, one Hajime no Ippo reference with Arc as the primary lead, and is eaten by her worst nightmare.

Ciel's Melty Blood appearance involves getting a shoe to the face with Shiki's kick that he doesn't understand, and getting pummeled by Akiha and having a huge rock dropped on her head. Oh, and she also manages to kill the stray nightmare of Nero Chaos, who shows up just to have fun and be Nero Chaos.

Arc is too iconic not to be number one. Akiha will likely have more focus in RG than the original, based on the hints of further development for her in Near Side (Arach's comments). Ciel's development is good enough to maintain her popularity, as well as being one of two poster heroines until RG. Hisui will likely be overshadowed by Kohaku again while Satsuki will get a nice shiny route to herself. Noel already has some interest judging by the fanart she gets, so she'll grow if she "redeems" herself as a person in the eyes of the audience. Shiki's male and thus has little potential to climb the rankings.

Arcuied and Shiki's relationship is a simple one, being of mutual lust and attraction and isn't a perfect as they fight, argue, and have a lions share of misunderstandings and disagreements throughout her route. Arcueid while naive doesn't fully trust Shiki and more than once calls him a monster early on and gets irritated when he's reluctant to jump into action with her even going as far as to threaten his and his family's life if he doesn't accept working with her and Shiki struggles with his growing attraction to Arcueid, treating her far more cruelly than most characters(san Arihiko) until he comes to terms with those feelings and Arc getting influenced by Shiki's humanity and growing protective of him realizing his fragility but they grow to trust and love one another throughout the course of the route and their parting scene is genuinely one of the best written scenes I've read. With Ciel they're more equal and mutually tease one and flirt with one another Ciel is investigating and watching Shiki to see if he's Roa and when the revelation is revealed a lot of details of their interactions early in the route become more sorrowful up until their fight in the hallway where Shiki's willing to let Ciel kill him but refuses to die hating her even if everything up until that point between them might have been a lie. There's also the aspect of Shiki (surface level) normalcy is something Ciel wanted but could never have because of Roa's possessing her ruining her life and any semblance of normal happiness she could of had.

Ciel's route has legitimately some of the best scenes in the VN -Shiki staying the night and Ciel's conversation with him about kindness and atonement after he kills Arc and she stopped him from committing suicide, the entire fight between Shiki and Ciel in the school when Ciel's cold facade completely falls apart due to Shiki's sincere care for her and refusal to blame or hate her for having to kill him understanding the situation is forced on her, her being terrified of fighting an extremely pissed off Arc but doing so anyway to protect Shiki and getting her heart torn out in the process, Shiki going toe-to-toe with Arc a bit for possibly the only time in the novel, that scene of Roa accepting his death with dignity and the pages of his book fading away is pure kino, and the remnants of Nanaya sacrificing himself the same way SHIKI Ryougi did for Shiki in KNK so Tohno could live with Ciel, Ciel's crying over Shiki, etc, etc - There are plenty of great moments and Ciel, if you don't just take her at surface level is a very well-written, competent, yet tragic heroine with some of the most natural chemistry with Shiki and can be genuinely cute and endearing if you give her a chance. I, for one, think we should love and appreciate our Curry-senpai a bit more.
