I made a superior broth just now. ingredients are:
- bag of instant noodles
- chinese cabbage
- two egg whites
- one carrot
- soy sauce
- a bit vinegar
- finely chopped garlic bits
- mushrooms

trick to make it good is to first cook carrot pieces into wok-grade hardness, then cook noodles with spice, then mix in eggs simultaneously with mushrooms, and for the last moment add cabbage with soy sauce and vinegar while stirring but only stir for under a minute, then let it rest for a half a minute and ready to eat

I excel at wok cooking, so soups like these are trivial. also, green tea gives a nice pinch of freshness!

no. it's used as a spice to rub down the flavour difference between spicy & a bit sweet soup and slightly bitter cabbage by augmenting sour flavours, so it's essential it doesn't evaporate, thus late addition. I use less than half a teaspoon of it anyways so it doesn't affect the eggs.

Being in So Cal, I have no problem just driving down to the closest ethnic area and buying whatever stuff they have in their shack of failed health inspections. I'm sure you're just shit out of luck if you don't have an asian neighborhood nearby.

If I were to take a shot at actually finding one, I'd type "ethnic food" into Google Maps and see if there is any concentration of them in your area. If you see like 5 Korean restaurants within a block of each other, you've probably found a good place to go shopping.

A lot of stuff can be substituted though. Shallots are just mild green onions and whatnot. Might want to go to /ck/ for the rest of them.
