Magus mainly does a good job. There are exceptions, like the oomukade story, but I think he often does about as well as you can do, and still appease your audience. The problem is, even if it would make sense to piss yourself at some point, no one wants to read about it. Especially not the tough guys who sit in their gamer chairs for fifteen hours a day, but would totally win against monsters, magic and poison, because they're mad; that's completely how that works. It's a balancing act.

Let's use Journey of the Magi as an example. Anon's clearly scared at many points, but his snarky attitude is just a defense mechanism. Magus even has him despair or afraid, but doesn't cross the threshold into him crying. He allows his main character to fight back wherever he can, even if it's just something incredibly petty since he's powerless otherwise in many situations. The funniest thing to me is, he even caters to the tough guy crowd when Tomb Haven comes to extract Anon from Admaz. Anon throws out all reason, decides to attack an army because angy, and gets slapped down like you would in that situation. The result is, he got to write a character with submissive tastes without people complaining. I have to commend him for that. It's no easy feat when some readers take your character submitting at all for any reason, at any time as him being a doormat.

I think some people misunderstood this post. I don't want protagonists to be alpha chads who face the monsters and HFY their way to victory. I want them to truly *commit* to being sympathetic, teary victims - when they fight back, I want it to be desperate and self-destructive, when they're beaten, I want them to be scared. I want them to be outmatched, emotionally fragile, and genuinely so terrified of the mamono chasing them that they're liable to hurt themselves trying to get away from her.

It's easy to write yourself into a corner doing it, for sure. One of the more harmless ways is something you already see floating around sometimes - a manticore, ushi, or other very aggressive mamono encounters a young and/or fragile human in the wilderness and decides to chase him down for fun. Even if it's a little mean spirited, she just sees it as foreplay - the guy does not.
Either through being an orderfag, isekai'd and not knowing about mamono, or just being a generally easily startled person, they treat the chase as if their life is actually on the line. Preferably hurts himself trying to escape from her - tumbles down a cliff, jumps in a river, etc etc
By the time she catches up with him he's an exhausted, shivering wreck, panicked, nigh-comatose, and completely terrified for his life of the girl chasing him. Now cornered, he might try and fight back (futilely, of course) and the mamono defending herself just makes him more desperate and afraid.
The rest of the fic is spent basically putting the mamono to task trying to convince her new husbando that she's not going to kill or hurt him. Language barriers make this even more fun IMO.
Other fun scenarios:

The whole situation reminded her of when she herself had been so callous and stupid, centuries past. Waiapi had nearly…she couldn’t finish the thought, her pale ears shivering in shame.
