Those streaming services also bank on people browsing around the site instead of downloading content and bailing, so they need streamable media that the average Joe's connection can support. The people themselves might not even want to download stuff for privacy reasons or for the space necessary. I'm sure it'll come as compression technology evolves and global bandwidth jumps.
