I know there are at least a few of you living in Japan, how do the Japanese brew green tea?

I've learned the hard way to stop buying domestic North American-produced green tea, it's absolutely terrible. Only the stuff imported from Japan or China has been good.

Now I need to know how to brew it. I've been brewing a flat tablespoon of sencha in a small teapot with 80 degree water (used a candy thermometer to check). I brew it for about a minute, but something's missing. The tea leaves smell like the way I want my tea to taste, but the tea comes out tasting... weak.

What am I doing wrong?

Double up on the leaves and keep everything else the same next time. Increasing the temperature or steeping too long will just make it more bitter.

Okay. Should I push down on the leaves gently after brewing with a spoon to drain some of the liquid, or will that make it bitter?

Some sites say to do it, others say no.

I've never done it and don't see how it would fix anything. Sounds like something teabag drinkers came up with.

it really depends on type of tea, temperature, pressure, ect.
some teas become bitter of use squeeze the leaves
but all of them (in my experience) become cloudy
