You don't make money off of anime you dumbass. Anime is the type of medium where you're lucky if you manage to break even. Despite the fact that they pay the animators chips and peanuts, they still struggle to make a profit in the anime industry. Novels and fanbooks are the best way to make a profit, and ZUN is already doing that. He IS trying to get money in some respects. I don't think he enjoyed working for a bankrupted company like Taito.

Also, a canon anime would destroy the ENTIRE franchise because Touhou is a template series (i.e., a fanon series where the users create their own plots). ZUN making canon stories for the characters is the equivalent of GNU selling the rights of their software to Microsoft. Even ZUN knows high profile projects like that would be bad for business, hence the reason why he told the people that were making the fan anime to fuck off.

I have a theory about 4chan, Touhou, and 2ch's popularity. If you look at 4chan's post count, it's the second biggest forum in the western hemisphere. But if you look at the average amount of users that are online at any given time, it's only 30,000. Which is very small compared to most forums. I think we're just the most deadbeat users on the Internet. Unlike normal users that only post for a few hours, we 4channers keep posting for hours (sometimes days). To put this into layman's terms, we're nothing more than a vocal minority. I believe the same applies to Touhou, Nico and 2ch, except on a much larger scale.

If Touhou was half as popular as we think it is, ZUN wouldn't have to work in other Jobs. In the case of 2ch, Japan just happens to have more people with our mental disorder. People with our disorder are attracted to niche/doujin topics and Anonymous forums. But just from measuring the channel views on nico, 2ch cant be that popular. According to alexa, 4chan's traffic (which is growing 4 times faster than 2ch) will surpass 2ch in traffic by 2015.

1. They would introduce male characters.
2. As a logical consequence of 1, the anime would have shitty love stories.
3. They would divide characters in "good" and "evil" sides, much unlike the original stories.
4. Fanart would die because all the popular trends and subjects on it (character pairings, fan-given traits and so on) would be extensively silenced by whatever shit the anime producers decide to introduce in the episodes.
5. They wouldn't even use the ZUN-made music for the soundtrack.
6. You can't portray danmaku in a show as clearly and detailed as you can in the games. In fact, the concept of danmaku might very well be changed for generic explosions and sparks.
7. New Touhou fans won't even give a shit about the former games.
