the most correct would be ピンク(色だ), without the subject. I can't really think of any natural situation where you would want to specifically mention the subject. And if somehow you really had to without context, you would probably use は since you want to emphasis to be on the color, not the dress itself.

I was a foreign exchange student to Japan over a decade ago, got to the point of being conversational (NOT fluent), and am now trying to brush up on my language skills before heading there for vacation.

I thought maybe trying out Duolingo would be useful, but while it's not LITERALLY worthless, I have such a bone to pick. As far as I've seen, it never discusses grammar, it never goes over nuance, it does shit like translate どうぞ as "here you are" ("go ahead" matches much more closely and is far less ambiguous), teaches both よろしく and 初めまして as "nice to meet you" without ever explaining the difference, teaches colors with and without the い at the end without explaining the difference, sometimes adds ございます to the end of things without ever explaining what it means, it's just awful.

just do your best to understand things, don't pause, don't run away, don't go piss or get water, or make any excuse to take a break, just get it over with, the first few times you try to listen to anything itll feel annoying as hell and youll want to do anything else at all. just tough it out, make your brain realize that theres no way out and keep at it. things wont sink in right away, just do whatever you think, every day. as long as you are consistent, youll progress. beyond that just do what you think keeping in mind that people hate feeling lost or stupid, and a lot of what annoys people starting out is feeling lost and stupid.
its the hardest language in the world, and you wouldn't even try it if you weren't retarded, so just embrace it and have fun
