It's not really in a file, you can edit it with debug console or cheat menu. Sex is stored in a TALENT array, which has two dimensions - first refers to character, second is the trait number.
We look for PC's sex, so check TALENT:MASTER:性別, as per Talent.csv. They store a value for it a little unusually, using bit operation because of how they check if someone has a dick or not (bit & 0 for vagina check, bit & 1 for penis check).
So 1 is equal to being female (bit & 0), 2 is male (bit & 1, 3 is futa (bit & 0 and bit & 1)
