I don't think it's necessarily OOC for Shirou to do what he did. Although present throughout all the routes, the theme of Shirou learning to value his life by seeing that the girl he has fallen in love with loves him and thinks his life has value is most prominent in UBW, hence all the time devoted to what Shirou finds fun, how Rin helps him loosen up, his remembering why he found Kerry's ideal so beautiful thanks to Rin's concern for him, etc. Shirou may be pathologically altruistic but he is selfish when it comes to those he loves and that helps him to learn being selfish about other things. It's thematically appropriate for him to be so "sadistic" during sex, it just reflects how even Shirou may desire something for himself. Not to mention he was actually quite considerate throughout with Rin. He took his time and he even offered foreplay in the form of cunnilingus to her. It's Rin's insecurities that were really at fault there. Shirou only snapped at the end when it basically became unbearable.

The UBW adaptation was almost perfect, expanded on scenes from the VN and changed very minor details like inner monologues into visual metaphors, symbolism and enhanced themes in very subtle ways.

The HF adaptation Movie 1 was good, but the rest cut many, many important scenes from central figures of the route in order to give an almost non-stop stream of Sakura scenes to the point many parts of the movies felt disjointed, skipped or half-assed. Lancer and Assassin fought in a highway and blew up a truck. It's not like the fight was extremely short and they never left the temple, why would they stretch out that fight? Then you have the awkwardly explosive battles that go on for far too long. One of them was one sentence in the VN, and was dragged out for 12+ minutes in movie 2.

Nasu was obviously influenced by Kadono, but all of the actual similarities seem superficial to me. Saying that he "copied the main idea" is a huge fucking stretch. The closest thing I can see is the concept of Counterforce being sorta similar to Boogiepop and some other entities, assuming he didn't already come up with it in Mahoyo years prior. But then again Nasu develops CF in his own unique way also.
