Everyone's a bit shy, it seems? Haha
Let me start:
>the OST is overall mediocre in comparison with other touhou mainline games
>the selectable cast has shrunk down to three characters, whose movesets don't change depending on your choice of spirit, BUT you still have to play the game with each of them thrice in order to get every ending despite there being close to none changes to the dialogue
>the final villain is somewhat underwhelming in terms of lore; what even is an idol?
Those would be mine five main complaints. Now, to the good side:

Despite also having WBaWC as likely my least favorite entry with SoEW, I disagree with your most of your points.
I think the OST is pretty great overall. I think ZUN did quite a good balancing act of maintaining tension throughout the early stages, whether it be the eeriness of Lost River, the layered anticipation of The Lamentations Known Only By Jizo, or the chaos of Unlocated Hell. It's all quite nice, then it all clashes with Beast Metropolis, fitting of the general theme of the game, which I also find interesting. Having been manipulated by Yachie & posessed by a beast to take on Keiki, it's pretty neat. It presents a new & interesting world that is largely self sufficient, which I believe is the ideal way to go about for new Touhou games, as expecting new characters to compete for same-y roles as old ones who have had decades worth of development, official & fanmade, is a bit of a lost case. Even the endings try to show that it's not as manichaean. You could argue the Animal leaders have earned their rights to enslave the human spirits, as they oblige by the law of the strongest regardless. It is ruthless, but they stay commited to it. I think the characters of WBaWC are pretty fun to use and I look forward to seeing more works explore them, be it official or fanmade.
That being said, WBaWC as a game isn't exactly perfect. There is an overabundance of streaming sections throughout its stages, bringing a feel of monotony, and certain spells are rather underwhelming. For every sort of neat spell there's also one like Urumi's, I don't remember if it's her last or before, but it's kind of just a random mess of bullet, very similar to what Nemuno had in her 1st spell. It's a little underwhelming. The beast & hyper gimmick is overall a mixed bag too, the glowing in a lot of them can prove particularly distracting if not downright awful with Marisa Eagle hiding bullets, but there can be a certain fun from managing to keep your hyper up & destroying everything, particularly as, funnily enough, Marisa Eagle, with her shotgun of big lasers being incredibly powerful. That being said, it being rather monotonous, easy to figure out & cheesable make it an entry I have enjoyed, but not under all circumstances, and not the first game i'd want to boot up if I just wanna play something.
