I really don't see how anyone who doesn't like Rin and/or thinks she's irrelevant to the story's themes, Shirou's character development and doesn't go through any major character development at all could possibly think of UBW as anything other than a massive mixed bag. About 70-80% of the route's runtime is spent with Rin, while the fight with Archer, which such people would argue is where basically all of Shirou's character development is situated, is only one scene. That's a massive condemnation of UBW and Nasu's writing of it, to supposedly waste so much time with a character and a romance that don't even fucking matter. At least in HF if you don't like the romance there's the stuff with Illya, the conflict between the two sisters and Kirei. It's such a stupid and retarded way to write a story.

I’m glad they changed it since the black skirt is more classy and the red skirt would look gaudy. Sakura is a well-written character even though I don’t love her due to being a Saberfag. Her scenes with Shirou in the rain and the knife scene are excellent scenes for her that make her compelling. I don’t get the hate for besides lol worms. She’s not perfect as she’s treated like a plot device too much in the route, but she’s fine and is interesting as Dark Sakura. The scene of her ripping the Zouken crest worm out of her chest is also metal as fuck.

Honestly, she isn't an outrageously badly written character.
She has her scenes and moments, *but*, they don't make up for everything.
In the first place, knife scene is literally just Shirou reacting to the plot (so saying that is a scene she carries is hard). Then we have the fact that, as you mentioned, she is, mostly, a plot device.
She doesn't have enough presence to be a propper character, being there to move the plot a majority of the time. Then there's her personality, which is basically "senpai". There isn't much to make her compelling other than simpathy one might feel for her, and that has its limit.
I honestly get the hate, since it can be annoying to see what amounts to a pity party walking around.

I mean, I think it was just a too sudden breaking of expectations. You go through Fate and UWB, and suddenly, without warning, you get something as dark as HF. It caught people off-guard and might have felt a bit out of place.

Considering the amount of shit Nasu added (the ritual, Roa's lower half being killed by MEoDP and the dreams between Nanaya and Loli Arc), she does need one to get it answered. I'm mildly announced that the teaser of her true route was revealed in a gacha game, but it's nice to get a confirmation nonetheless. Maybe Altrouge will finally get a proper appearance too because Nasu might finally answer the reason why she stole her hair (because most of it had that luminous glow in her 3rd art).

Day 4 is all about the contrast between Rin and Shirou, the former spending all of it committed fully to the HGW as the latter engages in SoL hijincks with side characters; Rin is a proper mage, while Shirou is a headless chicken aimlessly flailing around. It expands on that contrast created first with the Berseker fight, where Shirou nearly collapses in the face of his powerless while Rin remains calm. Day 5 is all about Rin's commitment to her mage lifestyle. Day 7 is all about deconstructing the contrast that had hitherto been established. As Bloodfort activates and the entire school body collapses, having its skin molten off, it is Shirou who remains calm and collected as Rin is shaken and disturbed. Through this we gain insight into the characters just as they do about each other; Shirou realizes even more how her strong mage personality is a facade she has created to hide her weaknesses and insecurities, while Rin gains her first glimpses into Shirou's distortion as he says he's used to seeing dead bodies.

Day 8 is basically nothing but Rin and Shirou interactions. Day 9 is a showcase of Shirou's deepening feelings for Rin as he projects Kanshou and Bakuya to protect her from Kuzuki. The centrepiece of Day 10 is Shirou's defect, where the fundamental contrast between Shirou and Rin is established; despite all her issues, Rin is fundamentally healthy enough to realize her contradictions and flaws, as well as a committed hedonist who only does things if they make her happy, while Shirou is too saddled with guilt to have fun for his own. Upon realizing that, Rin commits herself to helping Shirou get over his issues, taking him on a date the very next day, focused entirely on Shirou's issues, but also on how despite his enormous guilt, he still did have fun teasing Rin, subtly positioning her as the solution to Shirou's dilemma in the route that he has to come to accept. The stuff with Medea and the loss of Saber lead to Rin finding out about the Fire AND to Shirou discovering the pendant. It is by realizing that Rin, the girl he has fallen for, values his life and considered it worthy of saving that he comes to value it himself, which is why when he saves her in the Church after Archer's betrayal, he does it not because of his guilt over the Fire but because he loves her. The confession is all about how Shirou's feelings on his ideal reflect those he has on Rin; he idolized both at the start of the story, but as the events of the route progress, he comes to understand that both have flaws. Nonetheless he chooses not to reject either; instead, his belief in his ideal strengthens, as does his love of Rin.

Your distortion has Shirou making his most important realization of the route thanks to Rin; just like her who became a mage because it made her happy, so too did he choose to embrace Kiritsugu's ideal because saving people made him happy. He just didn't realize it, and he feels deeply grateful to Rin that she loves him and cares about him so much that she would help him make that realization. Even as Rin lies tied up in the Einzbern mansion while Shirou and Archer fight, she STILL gets deep characterization, when she reveals she loves Shirou because of his strong will and persistance in the face of the impossible, as well as when Kirei reveals that Rin is defined by the contradiction by her pragmatic and cold side, and her Shirou-like idealistic, uncomprimising side that never quits. It reveals just how much of an impact Shirou had on Rin; it is thanks to her interactions with him that slowly over the course of the route that she embraces her human side over her machine-like magus side. That is why UBW ends on Rin giving Shirou her mana so he can use UBW, an allegory for Shirou achieving his ideal thanks to Rin's love and support, and her choosing to save Shinji, something Rin at the start of the story would never do, because she believes is his ideal and she believes in Shirou. It shows her completely embracing her humanity.

And of course, the two scenes that cap off UBW are Archer telling Rin to watch over Shirou, knowing that thanks to her love he will never become like him, and Shirou putting aside his distaste for the Mage's Association to be with Rin, a microcosm of how Shirou will never become like Archer because he will always put Rin before his ideal, because he only pursues that ideal because it makes him happy, and Rin makes him even happier.

It only takes a little bit of critical thinking to realize all this.

The good thing they did was the amusement park episode. The Deen adaptation if the Fate route also mixes routes. Caster being revealed as the master of Assassun. Kuzuki beung revealed as Caster's master, Shirou vs. Kuzuki, Rin vs. Caster. Then there was the whole Caster usinf Sakura as some kind of Holy Grail and Sakura's power which was a reference to the Heaven's Feel route. Rin and Sakura being revealed as sisters. Zouken even appears in Rin's flashback when Rin rescues Sakura from Caster. They also removed the living orphan corpses from the Deen anime.

Arc's route had a huge amount of infodump in the OG (similar to Saber's) which was toned down in the manga adaptation. Nasu fixed this by having her doodle and explain it in a whiteboard to make the loredump more engaging. Not to mention, Sasaki perfectly tying her route with the Epilogue, while giving her a brand new ending which goes back to what arguably is the core theme of Tsukihime, which is continuing to live happily the best of your life in the present without worrying about the past or future.

It's the final epilogue with Aoko where she tells Shiki that his body is dying and chastises him for fighting, but then he disagrees with her saying he's actually happy despite that and that he'll live his life to the fullest. It ends with him bandaging his eyes since the glasses no longer work and leaving in preparation for his journey after Arc.

Shiki was miserable as fuck in her original True route and this feeling is amplified even further in the remake, with him monologuing that he definitely does not have the confidence to keep moving forward while pretending like nothing happened. But he forced himself to just accept everything just so that she can keep on having good dreams like she wished for. Shiki just doesn't seem the type to let things as it is, unlike Shirou, he is selfish and would sacrifice everything for the people he cares for. In Arc's route, his happiness was his happiness was experiencing her warmth and spending 'meaningless' simple times with her, and he also wished to be the one to continue making her happy. Sasaki tied that with Eclipse and gave her a new ending that has him taking her back in her castle. Shiki is aware that he no longer has much time to live, but what matters to him in that moment is he's spending his life without regrets while also looking for the positive days ahead of him. It still ended up being bittersweet in a way, but rather than ending it with a bad taste (with the protagonist feeling miserable in her true route), there's a sliver of 'hope' that these two will be living the best of their lives with the time that was given to them.

Well, seeing as Sasaki made a one-shot manga about Arc's birthday to celebrate the Remake, and that it's clearly set after his True End with a special message at the end that he wants to continue this story, I'm pretty confident that they lived happily even with the pressure of time.

I honestly wouldn't mind getting more content about Arcueid's true end and Ciel's normal end. I really like when the protagonist goes on an "impossible" journey for the sake of his loved one. It's so good.

Roa being eliminated, Ciel staying in Souya and Arc returning to her castle does seem like it lines up pretty well to her route. Noel is fine in his story mode too. Maybe instead of Ciel it's actually Mario who helps Shiki travel to her castle after he finished whatever business he has for him?

He probably learned how to cook by helping in the kitchen during his 8 year stay with the Arimas. Shirou on the other hand had to learn that shit survive because neither Kiritsugu nor Taiga can cook so that's a different situation. Shirou is also somewhat overrated as a chef (from a technical standpoint) because in Emiya Gohan the girls (besides Saber who's still learning) are shown to be able to keep up with him during the cooking process. His main strength and what inspires his authority in the kitchen is being very versatile with his recipes and flavours knowing many options from around the world, something that the Tohsaka girls are unable to do as Rin specialises primarily in Chinese food and Sakura in Japanese.

I’m quite sure the VN specified that he was good but no better than someone self taught, and not only had Sakura become better than him in some kinds of foods, Rin was better than him/could achieve the same flavors with Chinese food.
