In general fan fiction is seeing characters that could never interact with each other interact and the decent stories at least give some reasons as to why it would happen. Shirou is someone that would try to help anyone that needs their help which is why both stories work. The last one works with the reason they both meet in the first place at least from my memory of the last time that I read it. None of these at least have the boring and tired excuse of Zelretch transporting Shirou to random places due to the troll trope that fic writer have given him due to the convenience he gives them for their stories.

For a good chunk, it was just railroading Danmachi, and the servant personalities felt much too “FGO” (to justify them being in a familia and not killing each other and everyone, I suppose).
They kept Bell as an MC, but he is… boring, and doesn’t have anything going for him other than harem.
In the end, it felt like a rom com that sometimes brought re-used plot that looked for a reason to throw servant utility out of the window and give Bell a spotlight.

Personally, I believe a better style of fanfiction would be the kind that throws estabilished events out of the window and tries for a completely different turn of events.

In the end, most fanfiction happen by strictly following the same events happening in canon, but with “x character” or “y character with this personality and powerset”. Which ties in to what you said, because the circumstances are different, it completely lacks the nuance that made the original events good, turning them into a hollow replication of events, which is boring, ‘cause you’re just seeing the same stuff again, and is hollow, because it lacks the original foreshadowing and circumstance. If it was original, it could follow through the new circumstance and nuance and create something good… (but this would require good writing.)

His own future self even jumps back in time to kill him for following his ideals to the end (except in the routes where he doesn't for no reason). But then Shirou just abandons his ideals completely for Sakura in HF as if they weren't his driving force for 60% of the visual novel.
- The bad endings are inconsequential and too abrupt. Most of the time they feel less like the result of my decision and more like an event shoved into the story as an afterthought.
- Powerlevels are highly dependant on the flow of the story and lack any consistency. Characters can go from "the strongest of servants" to cannon fodder in the next chapter. Shirou himself shouldn't even be able to keep up with the movement of the weskest servant, but still manages to evade and dodge his way into victory against Berserker, Archer, Archer etc. etc.

At a certain point, I just couldn't take the story seriously anymore even though Fate was shilled as this "deep", "thought provoking" and "autistically complex" VN on /a/ all the time. And I tried to enjoy it. I really did.

It sounds like you came into it with the wrong expectations. It’s a solid story and your complaint of it not being ‘deep’ doesn’t mean anything. Any story can try to be deep, it’s more about the way the story is told and if it’s effective. Given the way FSN masterfully uses it’s character writing and development and continues it all through each route as the most important characters change and reveal more truths about themselves this is done to an amazing degree. It’s a story that is effective at what it set out to do especially in its directing and VN scripting. Plus the editing in fights and the way music is used.

Because the circumstances he encounters in HF are wholly different from those of Fate and UBW. That's the good side of having of multiple routes -- you can explore characters from multiple angles to really get a sense for the full breadth of their character.

They really aren't though, they serve a narrative purpose. Depending on the ending of course. The first few Bad Ends in Fate serve to get you acquainted with Shirou's mindset. Mind of Steel has a distinct purpose of showing you the irrational uncompromising nature of Shirou. The first(?) bad end in UBW shows us that Rin isn't actually serious about killing Shirou and hints that she had known about him prior to the grail war (which will be explored later). Countless other examples here.

I second giving Tsukihime a try. Especially the Remake. Shiki is a lot more relatable when he isn't having an episode(which is fun though!). The characters he deals with are monsters of a different sort and I'd think you'd like the 'power levels' more in how they are written.

I actually like the designs from the UBW TV anime a lot, the Shirou, Rin and Kirei designs I am quote fond of. That one is one of the better looking digital anime I've seen. Good backgrounds and I even found myself liking some of the CG use. This applies to Zero as well I suppose. The HF movies though just overdo the effects so much. UBW and Zero aren't some visual feasts like a lot of traditionally animated anime and HF isn't bad looking but it's a noticeable downgrade for me at least.
