Doing anything that keeps your brain actively working will result in a net positive compared to just consooooming media. Wether it is learning a language, doing puzzle games, remembering chess openings, memorizing strategy guides for your favorite RTS or playing an instrument. I didn't really try to learn Japanese for the same reason you are doubtful because I thought it is a waste of time if I don't actually live there. It's a small island state with a highly localized language that isn't spoken (don't get autistic here please) anywhere else in the world. But now I just see it like doing mental exercise for 1 hour a day and it helps with motivating myself to keep going.

everyone learns differently, you'll have to find what works for you. some people do isolated decks just to get some familiarity and then go into vocab or whatever

if you do vocab decks you're going to get thrown a ton of new kanji anyways. common thing would be to edit the cards with mnemonics from wherever you prefer (wanikani, etc.) to help them stick initially the first times you see a particular one. WK is free to search shit up so that's what people i know used, seems to help them stick with it for awhile.

How powerful is reading the raw manga and then watching the anime for audio immersion? Obviously the more faithful the transition the better. I imported Girls Last Tour and since that is a really straight forward adaptation it seems like it could be good method for retention and remembering.

Also I started Phoenix Wright as the first pure JP story game that I played through, and I'm almost at the end of it. Should I keep on that series since the writing is fairly simple or start another VN or game that won't be focused on the same vocabulary group (eg legal vocab).

I'm getting close to a level of japanese where I can understand what I don't understand. Mostly my problems is with kanji, as I've been making somewhat steadily progress in recognizing them, but I struggle with the pronounciations. So I was thinking in picking up a japanese version of a manga with furigana to translate it sentence per sentence.

Is it a good idea? I was thinking of using One Piece since it's easy to find and I already have paper version at home, so it'll be a point of reference.

it took me a week, but i went through and changed the deck's glossary to j-j and deleted duplicates for words already in my deck. if the words in my deck were mined from a source without audio/img, i added the genshin ones to my card and deleted the genshin card to keep my learning stats and reinforce context in case i fail it in the future. i find that i don't know some of the other words in the sentence sometimes, so i make cards for those as the situation arises. mining anki cards from anki cards is cool. if you run the front, sentence, and glossary through kanji grid, you see that if you can read them all you'll be at or near n1 as far kanji exposure is concerned.

"listening mining" is just a side-effect of mining.
You either mine words from anime with something like memento that does all the audio cutting for you ez pz, or when you mine words from novels/etc just add the automatic audio with yomichan.
