this is my special vegetable curry and you can normally find japanese roux at your local asian supermarket
you butter/oil your pot and fry your onions, garlic, and protein (or in this case, fried tofu) first
then after it's cooked a bit you add the rest of your ingredients and for this dish i normally use carrots, potato, beans (whichever you prefer), mushrooms, and corn (i ran out of mushrooms and corn when i made this batch though)
fill up your pot so that everything is poking through the surface just a bit and bring it to a rolling boil and once it's boiling you add the roux and then lower it to a simmer
let the roux melt a bit and then stir occasionally
at this point you can add any special ingredients, i like to use tomato paste/puree and ソース (pic related)
simmer it for as long as you like, but make sure it's at least long enough so that the vegetables a soft enough to easily split with a spoon
finally, serve and enjoy!
