I'm having trouble with Anki, I feel like I never have a chance to actually learn a word before it starts jamming more in. I can't really hold 12+ squigglies at a time in my short-term memory long enough to transfer them to long-term, is there a way to adjust the input rate or do I just have to make a new deck every time?

There is. I usually set it to 0 new words when I think it's starting to become overwhelming. Google how.

Just keep on letting the computer know you forgot it so it gives it to you tomorrow and the day after and after over and over again
I remember being absolutely convinced I'd never remember it, until one day I did remember it, and then forgot it, then remembered it again, then kept remembering it
That being said, you can of course set it to 10 new cards a day

The problem with constantly pushing your memory like you do with anki is that because of the nature of always pulling yourself with the next rung before your weight is fully off the previous one is that while effective it never gives you the "checkpoint set" feeling.
At some point you have to stop asking yourself "is it working?" and just, regardless of how shitty it feels, do it day by day and tell yourself that it IS, period, and do that for like 2-3 weeks and THEN look back and re-evaluate

I just want things to go back to normal again...
I hate that the possibility of that feels so out of reach right now due to antis. If it wasn't for them she would have settled down recovered alot quicker than she has...

You should learn words by reading though. Just learning words from premade decks is not the best approach. You have to learn the words you need, and those are the words you encounter when you read and you don't understand.
You need to see the words in context and also a good approach is to create flashcards not with only words but with complete sentences. I admit I didn't do it when I learned niponese but it's a good approach than just adding words alone with their many meanings.
