Looping tends to drive people mad, but most people would just break down and give up. Becoming a good witch that provides quality entertainment requires specific qualities that few people possess. Look at stuff like Memoirs of Lambdadelta, where she gives a girl a blessing in the hopes that she'll fall and become just like her (i.e. a witch), but in the end, due to what Lambda perceives as excessive prudence, the girl remains human in the end. This situation probably didn't involve looping for the girl, but it still shows the difference between a normal person and a great witch in the making.

There's various ways to be suited as a looper, and some of those qualities can be taught, such as Hanyuu encouraging Rika to passive and wait patiently for a better future, but those require strong support, and even then, I imagine that most people wouldn't last long.
Satoko stands out because even in the original, she's incredibly stubborn and determined, with a truly unbreakable will. It's what enabled her to cope with high-level Hinamizawa Syndrome for what appears to be years, suffer through Teppei's abuse without ever relenting, and leave Shion unable to break her conviction even while she was being stabbed to death. Sure, she still went through breakdowns, but she never gave up on her beliefs, and the solution in Minagoroshi was not to convince Satoko to give up on Satoshi, but that her efforts to suffer under Teppei were misguided and not what Satoshi would've wanted, thus redirecting those energies in a healthier direction.
Eua twisted this determination for her own purposes, but it still comes from Satoko herself.

When we consider the other club members, I doubt they would've lasted a hundred years. Mion would probably break down almost immediately, Rena would go full schizo without a real goal, and while Keiichi would last the longest, I don't think he could distance himself from past loops and the guilt would drive him insane.

I don't think she can be really considered as out of character when Meguri is still defining her character.
She saw Satoko as a suitable subject to bring in more entertainment, but she considers herself an observer, rather than a writer, so after priming Satoko through the worlds we've already seen until her mentality was turned into something suited for setting up a show, she leaves most of the details to Satoko, rather than planning out the performance herself.
I feel like her surprise at Satoko setting up lose conditions and a desire to bring Rika into the loops actually helps her character, since it makes it clear that despite all her experience and power, she's very distant from mortals and doesn't fully understand them and their desires, though she is obviously pleasantly surprised and finds Satoko's little game highly amusing. Even in the anime, Eua was supposed to be limited in her views, leaving her unable to predict Rika's actions at the end, so having her be surprised at Satoko's willingness to be able to lose, even though it's of no benefit to her goals, gives Eua the limitations necessary to be a real character. Satoko setting up a victory condition for Rika also ties in nicely into the nature of her traps, which always left the victim with a chance to overcome them or get revenge afterwards, despite Satoko's talents at predicting people's behaviours.

Looping is a completely unnatural experience that damages your humanity no matter what. The more suited someone becomes towards looping, the less human they become. The only thing a looper can hope for is that they solve their problem before the damage becomes unmanageable, because looping is something you absolutely want to avoid as much as possible. Witches are the ones who enjoy looping, and at the point where the loops become actively desirable, you're probably more witch than human.

It's kinda different because this Satoko experienced Rika actually giving up on St.lucia for her sake, despite not being entirely happy. Of course that didn't actually work out in those worlds. In Sotsu, Rika was for some reason very determined to go to this specific school in spite of everything.
But I'm sure Satoko still has doubts, because Rika still wanted to leave the village or go to St.lucia if she could.

The anime had already mentioned studying a million times before Ryukishi made fun of people for thinking that was the reason. It could mention studying a million times more afterwards and Ryukishi would still make fun of you. I think Tsumi was the only time Keiichi remembered a previous world extremely clearly and also understood that it was real. He remembers some things in Minagoroshi, too, but those were more vague recollections that he can largely dismiss as him just imagining things, and while they influence his future behaviour, they don't form extremely strong regrets like in Tsumi. Plus, Teppei is a bastard and Keiichi's at least reasonable enough to not care about his death, only how the situation would affect Satoko.

He seems to remember a little more clearly in the manga's Tataridamashi, but there it's again Rika who helps him channel his energy into a more positive direction than just him regretting things. And with Shion going wild right there, it was easy for him to prioritize action over guilt, especially when he started to remember Minagoroshi too and realized that there was a good ending for all of them there.

I feel that if Keiichi became a looper and remembered everything, thus forcing him to accept the previous worlds as being real, he'd be bogged down immensely by his regrets over the friends he couldn't save in his previous worlds. Mion may be able to hide behind the mask of the successor, and Rena is used to pretending to be happy, but Keiichi is a rather sensitive lad who I doubt could separate himself from his previous failings. You have to be kind of a sociopath to keep looping, and if you're unable to dismiss the worlds you've left behind because you're a normal human being, you'd break down really quickly.

So Satoko never even questioned why she was suddenly living in a Final Destination movie in each and every single one of her loops? And now she went crazy and just so happens to want to do something that would entertain Eua? This plot sure is convenient.

That vague ass explanation doesn't fly when you recall Satoko being extremely confident and hopeful during most of Matsuribayashi (which is where Meguri Satoko comes from), which you may recall was about a professional mercenary squad with guns coming to murder her and her friends. Her life took a complete turn the moment her brother disappeared which made her change who she was and found true happiness with her group of friends, she didn't feel cursed at all during all those years until she entered St Lucia. Whatever scholarly faults she displays in Meguri, she blames it on herself, like not being able to keep up with Rika. Think back on the ohagi scene in Minagoroshi, where Keiichi remembers Onikakushi again, except he's nowhere near as convinced that it actually happened like he did in Tsumihoroboshi. Rena feels similarly when she discusses her memory of Tsumi, where she mostly takes it as her imagination but is not wholly convinced it is merely that, and likewise, Keiichi's memory of Teppei leaves him uncertain if it's a past event or just an extremely vivid imagination.
The relative vagueness of the Minagoroshi memories makes it significantly easier for them to cope with them, unlike what happened with Keiichi in Tsumihoroboshi.
